and juices every day on a large metal spit and is grilled and rotated for at

vegetables and believe it or not French fries and lay them on the piece of

“One of my favorite types of food will be French Cuisine. French
cuisine dates back to the middle ages. Then French meals were served all at one
time. The meat was spiced and it was pork, beef, poultry and fish. They
preserved the meat by salting it and then smoking it. They preserved the
vegetables by also salting them and putting them in jars. During the 15th and
16th centuries, the French was influenced was the culinary arts in Italy. When
Catherine married King Henry II, she brought to the French her Italian chefs
and that is how she introduced the culinary arts to the French Courts back in
the 1500s. During the 16th and 18th centuries, this was known as the Ancien
Regime. This regulated the food by going through the city government guilds.
There are two types of guilds. They are: One which the people supplied
the raw materials for the food to be made; and two, people who had the prepared
items already to be sold. In the 17th and 18th century Haute Cuisine (which is
called High Cuisine) was founded by chef La Varenne. The French Revolution was
the cause of the fall of guilds. That is when the chefs began to use their own
style of cooking and experimenting with the different types of dishes and the
ingredients that were used. Marie AntonieCareme was a prominent chef around the
18th and the 19th centuries. Around the 19th and the 29th centuries,
modernization began and thus the Haute Cuisine became modernized. Georges
Auguste Escoffier was also a chef and he too put his own touches and happened
to make Careme recipes simplified. It is very interesting to find out the
history of foods. French cuisine is my favorite and love it even more now that
I know a little bit more about it.”
